Copy mail to clipboard
Open the Apple Mail app, Gmail, Outlook, Yahoo Mail, or just any other third-party mail app on your iPhone. Open the email message you like to convert to PDF. Tap and hold on the message to select the text. Drag the blue markers to expand the selection area and tap Copy.
Note that you can select not only text, but also pictures and other elements in the email.
Create PDF from your clipboard
Launch the PDF Converter app on iPhone. Tap to open the Clipboard tab in the app.

Tap the Convert button at the top right corner, the copied email message or content will be converted to PDF. You can then send it by email, open it with other apps, copy it to iCloud Drive, etc.
