Open the native Mail app on iPhone. Choose the mailbox and select the email you like to convert to PDF. Tap on the action button at the bottom. You will then see the pop-up dialogue with options you can reply or forward the message. Choose Print from this menu. The Printer Options screen opens on your iPhone. Press firmly on the thumbnail image to enlarge it. Press firmly again to pop it into the full preview.
Now you should see the Share button at the top right corner. Touch this button to bring the share sheet and choose Copy to iBooks or Save to Files to save the email as PDF document to the stock iBooks or Files app on your iPhone.
